Waffles and bacon, waffles and eggs, or just plain ole waffles. Seems we can’t go more than a week or two without having waffles for dinner. A while back, I decided to try something different, and found a recipe for oatmeal waffles, made a couple changes to match our particular taste, and now oatmeal waffles are the winner every single time. Leftovers are not a problem, as they toast up wonderfully for a oatmealy waffley treat later. If you would like to try them, see below for the recipe.
1-1/2 C All Purpose Flour 1 t Vanilla
1 C Quick Oats 1-1/2 C Milk
1 T Baking Powder 6 T Butter – Melted
1 t Cinnamon 2 T Brown Sugar
1/4 t Salt
In large mixing bowl, stir flour, oats, baking powder, cinnamon & salt – Set aside
In small bowl, stir eggs, milk, butter, vanilla & brown sugar – Add to flour mixture
Stir until well blended.
Pour onto greased hot waffle iron & wait for the tasty goodness!
