Day 49 – Grandma Eddings’ Stuffed Pepper Cups

Dusty scored some FOC Green Peppers a couple days ago and requested some stuffed peppers. I used Grandma Eddings’ reccipe (see below for entire recipe). They were good, no doubt, but would have been sooo much better if we had been sharing them with her in person, and not just in my heart.

Grandma Eddings’ Stuffed Pepper Cups

6 medium green peppers

1 pound ground beef

1/3 C chopped onion

1 pound can tomato sauce

1 C rice

2 T worcestershire sauce

salt

pepper

1 C chredded colby or cheddar cheese

brown meat and onion and drain

add tomato sauce, rice & worcestershire sauce

bring to boil

cover and simmer until rice is almost tender

remove from heat

add cheese

cut peppers in half

put filling over top

bake at 350 degrees 25 minutes

sprinkle with more shredded cheese before serving
